Cake in a Cup
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract or your favourite tipple
1 large coffee mug (i use a small bowl!)
Add dry ingredients to your largest mug and mix well.
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using), vanilla extract and a drop or two of your favourite tipple,then mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts (high).
The cake will rise over the top of the mug, but don’t be alarmed!
Chocolate Self Saucing Pudding
1 c self-raising flour
3/4 c white sugar
1/3 c cocoa
1/2 c milk
60g butter, melted
1 t vanilla essence
1/2 c brown sugar
1 1/2 c water
1. Sift flour, salt, white sugar and 2 T of the cocoa into a 2-litre casserole or souffle dish. (i use a big bowl) Stir in milk, melted butter and vanilla essence. Mix well. Scrape down from sides and level the top.
2. Sift brown sugar and remaining cocoa over pudding mixture.
3. Pour 1/2c boiling water carefully over the pudding.
4. Micro-cook the pudding, high power, 8-10 minutes. or until the sponge rises up through the sauce. let sit for a couple of minutes before serving
Microwave Chocolate Brownie
(i sprinkle extra choc chips on the top before cooking)
1 cup sugar
1 cup flour
1 teaspoon baking powder
1/4 cup cocoa
2 eggs, beaten
Add 100g melted butter
1/4 cup chocolate chips
How to make Microwave Chocolate Brownie:
Sift together the sugar, flour, baking powder and cocoa.
In another bowl beat eggs and combine with the melted butter and chocolate chips.
Mix both concoctions together and put into a baking powdered, microwave safe, ceramic slice dish. (i use a silicone form)
Microwave 5 minutes, rest for a few minutes in the oven, remove, cool, cut and enjoy!
